Romanian meal
you will never forget. The men just amble over to the wood store, pull out some perfectly dried wood, and mix the species for a perfect flavour then destroy their image by covering the wood in diesel, lighting it and wandering off for a beer, before slapping on some cheap, supermarket meat - probably covered in some noxious red sauce on top, and sitting back to absorb the praise.

Look at the next step in our famous recipe. If you look at the pictures carefully, you will see Grandma is mixing in the maize into the water and stirring, and then repeating this until she has a mixture like porridge.
When you are happy with the mix, turn the heater onto low, but make sure you keep mixing and squishing out any lumps!
You will need to boil the mixture for anything up to twenty minutes to half an hour, depending on your stove (as you can see we use a traditional wood burning stove!). You will need to take the time to taste it and see if it has enough salt in the mixture - if not, add a little more!
When it looks ready, remove it from the stove and gently try to loosen up the sides with a spoon. Then give it another minute or twos low heat, to get the mamaliga really ready for the next important step!
According to this Romanian food recipe, pour it out of the saucepan onto a large wooden chopping board and then leave it to cool for a few minutes. Then take a long piece of string and cut the mamaliga into portions.
If you cannot eat all of it hot, then it is great cold the next day!

A real challenge in Romania is finding
organic Romanian food
as everything these days is sprayed to an inch of its life. I bought some land so I could have a small patch of green. I found the local farmers jumping over the fence, and spraying my trees for free as they didn't want any trees in the area to hold disease which could blow onto their commercial crops. I have written where I can find organic food and I thought I would share this information with you.
You need to open a bottle of
Romanian wine
and enjoy a glass with your meal.
When you prepare the barbecue, Romanian men will tell you need to also open a Romanian beer when you light the fire or prepare the meat. It is only polite to drink when offered it.
If you feel incredibly lazy, you can always explore a
Bucharest restaurant
but do not go in with great hopes! Most eating holes in Bucharest are still rather basic, the service is terrible and the food can switch from great to terrible from one trip to the next!
